At Split Pecan Co. BBQ, we take immense pride in our 25-year culinary heritage and our orchard-to-table process. Because we use natural, locally sourced ingredients and traditional wood-firing methods, please take note of the following:

1. Allergen Information

Our BBQ is prepared in an open-air roadside kitchen environment. While we strive for the highest standards of cleanliness, our menu items may come into contact with common allergens.

Ingredients used on-site: Our recipes frequently feature jalapeños, dairy (in certain sausages/sides), pork, beef, and spices.

Pecan Wood: Our meats are smoked exclusively with natural pecan wood harvested from our family orchard. Those with severe nut allergies should consult a medical professional before consuming wood-smoked products.

2. Natural Ingredients & Preparation

The "Smoke Ring": That beautiful pink ring around our brisket is a natural result of our pecan wood smoking process and is not an indication of undercooked meat.

Fresh Produce: We use fresh, locally sourced jalapeños and onions. Heat levels in our peppers can vary naturally from mild to very spicy.

Hand-Crafted: Because our meats are trimmed and smoked by hand, slight variations in weight, bark thickness, and color (such as our mahogany-colored ribs) are a hallmark of our authentic process.

3. Consumption & Storage

Immediate Consumption: Our BBQ is served fresh at our roadside location. For the best quality and safety, we recommend enjoying your meal immediately.

Safe Handling: If you are taking food to-go, please ensure it is kept at proper temperatures (above 140°F or below 40°F) to prevent spoilage. Split Pecan Co. BBQ is not responsible for foodborne illness resulting from improper handling after the food leaves our window.

4. Availability

To ensure quality, we smoke in small batches using our own orchard wood. We operate on a "first come, first served" basis and may sell out of specific items like brisket or ribs before the end of the business day.
